This is so yummy and so incredibly good for you! I found a greek recipe on line and made my own hummus and put it together with romaine lettuce and tomatoes, stuffed inside a pita pocket (thanks for the idea, Mom!). The hummus really fills you up (because of the chickpeas... or garbanzo beans). I've tried hummus of all kinds and this is the best I've ever had. Here's the recipe:
2 1/2 cups canned chickpeas (garbanzo beans), drained.
1/3 cup freshly squeezed lemon juice
2 cloves fresh garlic, crushed
1/2 tsp. ground cumin
1/2 tsp. cayenne pepper
pinch of freshly ground black pepper
1 tsp. salt
1/3 cup water.
to garnish for display at dinner table: 1-2 T. olive oil and parsley
Put 1/2 of the lemon juice in a blender and add all ingredients but the garnish stuff and the chickpeas. Blend for 5 seconds. Then add the chickpeas and blend on high until the consistency is like sour cream, but granular (about 10-15 seconds).
Blend in remaining lemon juice to taste (be careful not to add too much... lemon can easily take over this recipe). If it's still too thick but you don't want to add any more lemon juice, you can add a little water.
Tightly cover and refridgerate for a few hours to let the flavor really set in well.
Drizzle olive oil and add parsley to garnish (if desired).
Let me know if you try it out and like it. You might want to add Tahini to your recipe, which is 5 cups of sesame seeds (toasted in the oven for 5-10 minutes, shaking seeds frequently with a spatula so they don't brown. Cooled for 20 minutes, then blended with 1 1/2 cups olive oil for 2 minutes until the texture is thick, yet pourable. Add that to your hummus for an extra Greek taste.

Thanks for the recipe, Nikki! I've never added cumin to my hummus but it really makes a difference. I just made hummus and a yogurt dipping sauce for falafels the other day and it was awesome. In my hummus I usually also add plain sesame seeds and a clove of garlic. So good! --Candice
