Santa Fe Relish

I got this recipe from "Good Things Utah" and just had to share it with everyone. It's SO healthy, you won't believe how good it tastes!

This relish peps up the “good for you” meats like broiled or baked chicken as well as seafood and fish.

Chef: Angel Shannon

Ingredients:

½ of a (15 oz.) can of corn, drained
1 (15 oz.) can sliced black olives, drained
¼ cup diced red bell peppers
2 T. unsalted and chopped almonds
2 T. diced white onion
2 cloves garlic, minced
1 t. oregano
2 T. white wine vinegar
1 T. lemon juice
2 ripe avocados peeled and diced

Combine all ingredients except avocados.
Store in a sealed container at room temperature for 6-8 hours.
Before serving add avocados and serve with chicken or your favorite meat and seafood.
